Stuffed Peppers
(modified from the honeybee`s recipe!)
1 pound ground chicken
8 bell peppers
3/4 can drained black beans
1/2 can drained corn
2 cups cooked brown rice
3 cloves garlic
1/2 chopped onion
salt & pepper
preheat oven to 350 degrees fahrenheit. cook the brown rice ahead of time so it`s ready to use by the time you need to mix everything together. lightly oil the bottom of a baking dish (i ended up using two dishes because i made so many peppers). cut off the tops of the peppers and remove the stem and seeds. heat a little bit of olive oil in a pan and cook the chicken. season with salt & ground pepper. when the meat is brown, add in the onion and garlic and sautee until soft. remove the pan from the stove. mix in the beans, corn, and rice. stuff the peppers. bake for 30-40 minutes until the tops are browned and the peppers are soft.
per andee`s suggestion, i didn`t serve anything on the side because they were so filling. you can also add some shredded cheese on the top.
